Ingredients:

- 1 tablespoon of shrimp paste

- 1 tablespoon of dried shrimp

- 1 tablespoon of radish

- 3 tablespoons of sliced firm tofu

- 8 fresh shrimp

- 150 grams of Pad Thai noodles soaked in water

- 2 ladles of Pad Thai sauce

- 100 grams of bean sprouts

- 30 grams of chives leaves

- 2 duck eggs

- Bean sprouts, chives, ground peanuts, sugar, cayenne pepper, and lime for side dishes


To make the Pad Thai sauce:

1. In a pot, combine 200 grams of coconut sugar, 200 ml fish sauce, and 200 ml tamarind juice.

2. Heat the mixture until the ingredients dissolve and simmer.

3. Set the sauce aside.


To cook the Pad Thai:

1. Heat a pan and add oil, shrimp fat, shallots, radishes, and tofu.

2. Stir the ingredients until fragrant.

3. Add the shrimp and stir fry until fully cooked.

4. Add the Pad Thai noodles and stir until cooked and soft.

5. Add the Pad Thai sauce and stir everything together.

6. Mix the duck eggs and cook until the eggs are fully cooked.

7. Add the bean sprouts and chives leaves and stir everything together.

8. On the side, serve with bean sprouts, chives, ground peanuts, sugar, cayenne pepper, and lime.
